The Alchemist Behind Manuka Mana
From a New Zealand childhood spent watching his mum dry fresh pasta over a wood stove to formulating superfood blends in Bend, Oregon — this is the story of the man behind every Manuka Mana creation.
A childhood rooted in food and the natural world
Every great product has an origin story. For Josiah, it starts in New Zealand — with a wood stove, a mother who loved to cook, and a deep curiosity about where food comes from.
Growing up, Josiah watched his mum dry fresh pasta, bake from scratch, and pour genuine care into every meal. That early environment didn't just teach him to cook — it gave him a reverence for ingredients, an understanding that food is more than fuel, and an instinct that flavour and nourishment are never separate things.
By age 16, he had turned that passion into a career, beginning as a baker and quickly discovering that the kitchen was a space where creativity had no limits.
"Food is never separate from nature. When you understand where an ingredient comes from, you understand what it can do."
From Michelin-star kitchens to the science of superfoods
At 22, Josiah met Courtney, and the two eventually made their way to the United States — where his culinary career took a significant leap. Working in Michelin-starred restaurants as a pastry chef, Josiah refined his craft and deepened his understanding of flavour, texture, and technique.
But it was a parallel obsession — a growing fascination with the source of ingredients and the healing power of plants — that would ultimately shape his life's work. Josiah began experimenting with combinations that didn't just taste extraordinary, but actively supported the body. Food as medicine. Flavour as a vehicle for wellness.
That intersection of culinary craft and nutritional intention became the seed of what would eventually become Manuka Mana.
Why New Zealand Manuka honey became the foundation
When it came time to choose the base for their blends, Josiah knew immediately: New Zealand Manuka honey. As a native Kiwi, he had grown up understanding the significance of this remarkable ingredient — its depth of flavour, its unique consistency, and its well-documented health properties made it the natural anchor for everything he was building.
Together, Josiah and Courtney hand-picked each additional ingredient with intention, evaluating every addition not just for taste, but for the specific health benefits and unique properties it would bring to the blend. The result was something they had genuinely dreamed of — a daily spoonful that bridges the gap between indulgence and wellness.
The alchemist at work: sourcing, formulating, innovating
Josiah is not just the face of Manuka Mana — he is its engine. Every ingredient in every blend is sourced by him. Every formulation is developed by him. Every new product begins as a question he's asking about flavour, bioavailability, or the next frontier in functional food.
Today, he works with an ultrasonic extraction machine — a technology that allows him to draw out the full spectrum of an ingredient's beneficial compounds with remarkable precision. It's the kind of tool that sits at the intersection of kitchen craft and food science, and it suits him perfectly. With it, his range of possible formulations is effectively limitless.
This is what makes Manuka Mana different: it isn't a product built by a marketing team. It's built by someone who lies awake thinking about what the next blend could be — someone who brings the rigour of fine dining and the instincts of a lifelong food scientist to every jar.
"His culinary expression is never ending — he is always thinking of the next formulation."
Life beyond the lab: trail runs, cocktails, and family
When Josiah isn't deep in a new formulation, he's still usually in a kitchen — crafting inventive cocktails and immersive dining experiences for guests. Or you'll find him out in the Bend landscape he loves: running trails along the Deschutes River or exploring the mountains with Courtney, their son Koa, and their daughter Lily.
That connection to the natural world isn't incidental. It's the same spirit that drives every Manuka Mana blend — a belief that what comes from nature, handled with knowledge and care, is profoundly powerful.
What this means for every jar of Manuka Mana
Every Manuka Mana blend you open has been imagined, formulated, and refined by someone who has spent his life at the intersection of food, nature, and wellness. There is no factory team guessing at formulations. There is a chef, an alchemist, and a curious mind that hasn't stopped asking "what if?" since he was sixteen years old.
As food science evolves and new discoveries emerge, so will Manuka Mana — because the person driving it genuinely can't help himself.
And that's exactly the way it should be.
