At 22, Josiah met Courtney, and the two eventually made their way to the United States — where his culinary career took a significant leap. Working in Michelin-starred restaurants as a pastry chef, Josiah refined his craft and deepened his understanding of flavour, texture, and technique.
But it was a parallel obsession — a growing fascination with the source of ingredients and the healing power of plants — that would ultimately shape his life's work.
